Baked Orange Cheesecake

Graham Cracker Crust
1/4 cup sifted powdered sugar
4 cups Roberts Cottage Cheese
1 cup granulated sugar
4 Roberts Eggs, separated
3 tablespoons flour
1 tablespoon lemon juice
1 1/2 tablespoons Roberts Orange Juice
2 teaspoons freshly grated orange rind

Preparation

Prepare Graham Cracker Crust, adding sifted powdered sugar. Pat Crust evenly into a 9 inch springform pan, reserving a small amount for garnish; chill. Sieve cottage cheese twice; combine with sugar, beaten egg yolk, flour, lemon and orange juice and grated orange rind. Beat until very smooth. Process a small amount at a time in blender, if desired, for a very smooth batter. Beat egg whites until stiff, but not dry; fold into cheese mixture. Pour mixture into prepared crust; garnish with reserved cracker crumbs. Bake at 350° for 1 hour.

Yield: 8 to 10 servings
