Creamy Pineapple Salad

Ingredients

2 small packages lemon gelatin    
1 cup boiling water                          
2 cups Roberts Dairy Trim n’ Lite Sour Cream
1/2 cup well drained pineapple
1/2 cup chopped almonds
lettuce or spinach leaves, washed

Preparation

In a microwave, boil water. Add gelatin and stir until dissolved. Let mixture cool. Fold in the sour cream and drained pineapple. Pour it into a mold and refrigerate. When firm, unmold on a bed of greens. Garnish with the chopped almonds and serve.
